Chana and masoor dahl (vegan, gluten free)

Posted on 6 December 2013 · Posted in Our recipes    Share on

This recipe is naturally gluten free and vegan and it is full of flavors. The main thing is to use good quality spices, such as the “Terre d’arômes” ones.

1. Heat the olive oil with the whole spice seeds (coriander, cumin and mustard) in a cast iron or ordinary saucepan over a medium heat for about 5 mn or until you hear the mustard seeds popping like pop corn.
2. Add the onion, the ginger and the garlic and sweat for 3 mn.
3. Add the ground spices (garam masala and curcuma) then the tomato and leave to cook with the lid on over a medium heat for 10 mn.
4. Add the chick peas and the red lentils and cook for a further 15 mn.
5. Serve with basmati rice and a little fresh coriander.
6. This dish is even better when reheated the following day.
7. Keeps in the fridge for 5 days.
