Description and origin :
Kudzu is a plant that originally came from Japan and the starch is obtained from the roots.
It has strong jellifying and thickening powers.

Advantages :
Its uses and benefits are essentially culinary. It contains molecules that help to sooth the intestines and rebalance bowel function (constipation and diarrhea).

How to use :
To thicken sauces, soups, cream soups, stewed fruits, jellies and vegetable patés. Dissolve in a cold liquid before adding to a hot liquid towards the end of the cooking time. Kudzu thickens and becomes transparent.
